What do you do when you accidentally bought bananas twice and now there are about 12 bananas in the house with really only one person eating bananas? You make banana ice cream, of course! This is a healthy recipe, too, so no worries about too much fat or sugar!
Regular ice cream becomes creamy and not “frozen” because you add heavy cream and condensed milk. I was looking for some healthier treat, though. Plus, I wanted to get rid of my excess bananas, instead of buying more stuff (I don’t happen to have heavy cream and condensed milk at the house unless I specifically need it).
So here’s my recipe:
- 2 cups of milk (I used 2% lactose free milk)
- 3 bananas
- 2 packs of vanilla sugar (If you can’t find that; it is quite hard to find, any vanilla will do to sweeten)
That’s it! Put it all in the blender and puree it. If you don’t have popsicle makers (like me), don’t run out to buy them. Just substitute with cups. You can spoon the ice cream later after letting it sit for just a minute. I used half a straw in each cup in an attempt to make a popsicle out of it. Turns out that plastic straws will just slide right out once frozen. So if you want to attempt to make actual popsicles, I suggest using wood. Or maybe a spoon, so if it doesn’t stick, you can just start spooning right there. 🙂
After letting the cups sit in the freezer for 4 hours, they were ready to eat. Christopher was quite excited and loved his homemade ice cream. We had it as a snack in the afternoon and instead of popcorn for our movie night. It’s easy, it’s healthy, it’s yummy for anyone, and great for those hot summer break days!
